'AMERICAN WITH AN ITALIAN NOD' : BIRCH'S CLOSING FOR MOVE, PRIMO PLATES & POURS TO MOVE IN

Birch’s Restaurant and Bar closes its doors on June 27 in preparation for the move to its new location on Long Lake. Those doors will remain closed for over a month, and when they reopen, a different restaurant will
occupy the space.
“We’re calling it American, with an Italian nod,” said Tony Ostlund, owner of what will become Primo Plates & Pours.
Ostlund defined “primo” as “high quality, or of utmost importance.” Primo will focus on making ingredients in-house. This will include pasta and sauces made from scratch and over twenty craft cocktails with specialty ingredients like ginger-infused simple syrup.
Ostlund said that a family recipe for spaghetti and meatballs, made entirely from scratch of course, would be a main focus, but Primo will also offer personal pizzas and a wealth of high-end entrees.
The new restaurant will take over the space that Birch’s has occupied for almost a decade. Ostlund hopes to reopen the space sometime in August of this year.
“We’re changing a few things up,” said Ostlund of the interim period. “We’re changing some lighting, adding some seating.”
